Det omfattede et bes\u00f8g i USA. Her var\u00a0det sukker, der blev udr\u00e5bt som skurken i denne sammenh\u00e6ng &#8211; eller egentlig snarere de snarr\u00e5dige entrepren\u00f8rer\u00a0inden for f\u00f8devareindustrien, der forstod at udnytte muligheden for at raffinere\u00a0et sukkerprodukt\u00a0fra overskudsproduktionen af majs, og h\u00e6lde det i alt fra cola til pastasovs. Der blev fokuseret p\u00e5 netop den type sukker, der kan produceres billigere end almindeligt sukker fra sukkerroer og sukkerr\u00f8r, nemlig <em>High Fructose Corn Syrup<\/em> (HFCS).<\/p>\n<h3>Brugen af HFCS bliver mindre restriktiv i\u00a0EU fra 2017<\/h3>\n<p>Et par \u00e5r senere var der en del skriverier i de danske medier, om vi snart ville f\u00e5 amerikanske tilstande i Danmark, da det i EU blev besluttet at HFCS fra 2017 ikke l\u00e6ngere skulle v\u00e6re underlagt kvotebegr\u00e6nsning.<\/p>\n<p>Bekymringen gik is\u00e6r p\u00e5 om hvorvidt HFCS er mere skadelig end almindeligt sukker pga. indholdet af fruktose. Til\u00a0forskel fra glukose kan fruktose ikke nedbrydes af celler generelt efter det er\u00a0optaget fra tarmen og n\u00e5r til blodbanen &#8211; det oms\u00e6ttes kun i leveren.<\/p>\n<p>Der findes\u00a0 forskellige former for HFCS, hvor HFCS 55 er den mest anvendte og best\u00e5r af 55% fruktose i t\u00f8rv\u00e6gt (der forekommer ogs\u00e5 HFCS 42 of HFCS 65). Til sammenligning best\u00e5r almindeligt sukker, sukrose, af\u00a0glukose og fruktose som disakkarider (hvor de to molekyler er bundet til hinanden) i forholdet 1:1 &#8211; alts\u00e5 50% fruktose.<\/p>\n<h3>Effekten af HFCS p\u00e5 fors\u00f8gsdyr<\/h3>\n<p>Der er alts\u00e5 ikke s\u00e6rlig stor forskel p\u00e5 indtagelsen af m\u00e6ngden af fruktose, hvis HFCS erstatter sukrose. Alligevel er der nogle som har holdt p\u00e5 at indtagelse af HFCS er mere skadelig end sukrose. For at illustrere HFCS&#8217;s potentielle skadelighed for helbredet henvises ofte til nogle data fra rottefors\u00f8g, der blev udgivet i 2010. Fx tog rotterne mindre p\u00e5 i <em>Experiment 1<\/em> n\u00e5r de havde 24-timers adgang til HFCS ifht. 12-timers adgang, men det omvendte i <em>Experiment 2<\/em>. Desuden s\u00e5s det, at det fors\u00f8g hvor der blev sammenlignet med indtagelse af sukrose (almindeligt sukker), var der ingen signifikant forskel mellem grupperne. Fra Ruff et al 2015.<\/figcaption><\/figure>\n<p>Et senere fors\u00f8g, fra 2015, udf\u00f8rt p\u00e5 mus, viste heller ingen forskel p\u00e5 hvor meget musene tog p\u00e5 n\u00e5r de fik en kost med sukrose i forhold til en kost med fruktose:glukose 1:1 p\u00e5 monomer form svarende til den m\u00e5de det forekommer\u00a0i HFCS. Fors\u00f8get stoppede dog ikke her. Efter en 40 ugers periode p\u00e5 de respektive sukkerdi\u00e6ter blev musene blandet i samme indelukke, s\u00e5 de kunne konkurrere om territorier mm. For hanmus fandtes ingen markante forskelle (om noget klarede &#8216;sucrose-musene&#8217;\u00a0sig lidt d\u00e5rligere), men for hunmus var d\u00f8deligheden v\u00e6sentlig h\u00f8jere (ca. 2x h\u00f8jere) for de som forinden havde v\u00e6ret p\u00e5 den HFCS-lignende di\u00e6t. Initialt havde de samme mus en nedsat hyppighed for reproduktion (omkring 26%),\u00a0hvilket kunne tolkes som, at de var svagere end deres konkurrenter, der havde indtaget en sukrose-holdig di\u00e6t.<\/p>\n<p>Data fra endnu et rottefors\u00f8g (p\u00e5 hunrotter) blev publiceret i 2016. Her sammenlignedes effekten af, at drikkevandet indeholdt enten rent vand, sukrose, HFCS eller fruktose. I testperioden tog alle rotter lige meget p\u00e5, men det var de HFCS-behandlede rotter, som skilte sig ud, ved at have det markant h\u00f8jeste niveau af\u00a0totalfedt og triglycerider i leveren. Dette kunne ogs\u00e5 ses, n\u00e5r musenes lever blev studeret under et mikroskop. Fra Mock et al 2016.<\/figcaption><\/figure>\n<h3>HFCS og sukker i vores f\u00f8devarer<\/h3>\n<p>Som altid skal man v\u00e6re varsom med at overf\u00f8re observationer p\u00e5 fors\u00f8gsdyr direkte til mennesker. Men i det mindste giver nogle af fors\u00f8gene p\u00e5 mus og rotter en grund til at overveje om HFCS rent faktisk har st\u00f8rre skadelige effekter end almindeligt sukker, ogs\u00e5 selvom den fysiologiske forklaring ikke\u00a0ligger lige for.<\/p>\n<p>Som det er nu er der dog ingen h\u00e5ndfaste beviser for at HFCS frem for almindeligt sukker (sukrose)generelt har\u00a0en direkte skyld i vestens fedmeepidemi.<\/p>\n<p>Den st\u00f8rste\u00a0fare ved HFCS er m\u00e5ske dog i virkeligheden, at det potentielt er billigere og det er lettere at h\u00e5ndtere og\u00a0have med at g\u00f8re\u00a0ved fremstilling af f\u00f8devarer\u00a0(det krystalliserer ikke som almindeligt sukker), og derfor kan ende som ingrediens, hvor det ikke har h\u00f8rt hjemme f\u00f8r.
